only buy GBP to cover shorts
I would wait a bit to convert...

right now 1.37 USD (1.32-1.5 range)
It's easy to grin when your ship comes in and you've got the stock market beat.
But the man worthwhile is the man who can smile when his shorts are too tight in the seat 😃

+1.

I traveled to the UK in 2011, and the FX rates were insanely good. It was around $1.50 for a pound.

As you said it's good compared the US dollar, but the Canadian dollar has lost ground, so the cdn$/UK pound exchange rate has been better.

I'm going to London in September. What's the best way to buy, say, $1000 CAD in GBP?

At a currency exchange place. Honestly, for $1000 it doesn't matter a great deal. The differences between high and low will amount to $20–30 max.
