GICs without date stamp
For those with experience, are there any banks / financial institutions that will take an investment such as a GIC and not put a date stamp on it. something that will show investment but not length of time invested

You mean a regular savings account? By definition, a GIC will always have a maturity date... not sure what you're looking for.
