Gluten flour

I'm trying to make Chinese gluten balls (麵筋) to make Chinese vegetarian food. All of the recipes that I found only said gluten flour (筋粉), but does not specify low, medium, or high gluten. Does anyone happen to know?

Look for vital wheat gluten. I bought some on Amazon but the product I bought is currently not in stock. It was from Hoosier Hill Farm, 4 lbs for $16.99. You can go to their website to see if shipping from the States is an option.

Most major grocery stores sell vital wheat gluten. It's sold under the Bob's Red Mill brand.. and is usually found on a special rack somewhere in the store along with all the other Bob's Red Mill products.. if you can't find it, ask one of the people who work there where it is.. I've seen it in the flour section in some stores, sometimes over by the produce department,,or near the "health foods"

Is there a difference between vital, low, medium, high gluten wheat flour? As mentioned in my original post, the recipe only says gluten flour.

Low gluten is basically pastry flour. High gluten is bread flour. Medium must be all purpose. I think there is a difference between vital wheat gluten and vital wheat gluten flour...I bought vital wheat gluten for breadmaking. Vital wheat gluten flour is much more commonly available in stores.

I bought a small bag of medium gluten wheat flour from a Chinese market, but I'm not even sure if I got the right type.
