Good knife for slicing whole cuts of meat?

Good knife for slicing whole cuts of meat?

I bought one of the half striploins at Walmart this week and it quickly made me realize all my knives suck. Is there a specific type of knife that's good for cutting up steaks from whole cuts of meat like the one at walmart?

For bigger cuts, consider a 10" chef's knife or something like these

There are a couple of things you can do before cutting:

1 - Put the meat in a freezer just long enough to firm it up a bit but do not freeze.
2 - Cut the meat fat (cap) side down.
3 - Do not try to cut each steak to size (thickness), ie 1", 1.5", instead cut the meat in the middle, then cut each half in the middle, etc until they are the thickness you want.
4 - Unless you want shoe leather or to use in a stir fry do not cut thinner than 1", thicker is even better.

Always liked the look of the scimitar style knives for butchering.
Never used them though.

Which of those knives above are the most ideal for cutting those prime rib roast into steaks when they go on sale?

Nella sells that knife for $28 (my first link) if you're local. If you don't need new you might be able to find it for half that price for used there.

If not local, i think chefequipment is running free shipping promo.

That one looks pretty good to me. Nella's isn't close to me so I got one from chefsequipment for about $4 less. Thanks for the rec!

What's the best way to keep this thing sharp?

As Croc Dundee says Niiiice.

If you don't cut meat all the time, you probably don't need to sharpen it for a while. Hone before every use.

I use a two different grit wetstone from Amazon.ca. Also have a knock off Apex sharpener before that.

Likely to only butcher 3 maybe 4 slabs of meat a year so I probably won't need to worry about it then? Is this knife also good for carving up say, cooked prime rib roasts or turkey at christmas dinner? Sorry for all the questions I'm new to this.

If you don't use it often, you don't need to sharpen it very often. Just hone it.

It's a knife. So yes you can use this for carving. You can use it as a steak knife even if you want. I'm not going to stop you if you're holding it.
