Can't seem to find it on their website anymore but also unclear if its been discontinued. Anyone know?

Yes, but those that had it, they honoured and would let them keep it. The difference is that Blue Sky points can be redeemed at any time (in $100/$50 increments) whereas SimplyCash is an annual account credit. My Blue Sky is the longest serving member of my drawer CC collection.

Amex Choice Plus is still around too. Nobody has been able to apply for the card for years, but the handful of people who did get it seem to be grandfathered in.

Super-dumb question here, but how does one redeem the Blue Sky points? I have over 50K in points, but have never redeemed them for anything...
