I bought a hand held sharping tool but I only sharpen my expensive knives. The cheap ones I don't care

with a 220 grit and a 1000 grit stone.
for pre-cut maintenance: your standard honing steel.

I have two waterstones from CCK in PacMall; I use them once every month, usually while watching TV. The stones are $20 each.
I use an oval steel from T&T, about $15, prior to cutting and chopping.
I also have a DMT diamond steel from Lee Valley ($40), which is very effective.

I envy you guys with the stones. I just can't bring myself to freehand my Misonos, so I use the EdgePro sharpener. I like being able to set the angle exactly. It appeals to the OCD in me.

Edge Pro here too, it's pretty great once you've done a few knives and have the hang of it.

they test their work by slicing up a piece of paper that they hold up. it's pretty legit.

I use a spyderco sharpener for my cheap knives. My good ones I just take out to be done professionally.
