Knife sharpening and how sharp do you keep yours?

How often do you guys sharpen your kitchen knives?
How often do you hone your knives?
Whats sharp for you?
What methods do you use?

I do monthly sharpening using electric sharpener on my victorinox chef knife and use honing rod weekly or as soon as I feel it not slicing anything with skin easily.

I had shitty hand me down knives. Recently I bought some new, nicer ones. Haven’t done any sharpening etc yet. Interested here though.

I hone almost every use, and I sharpen maybe once a year using a Chef’sChoice 15 Trizor XV.

I've got a chefs choice electric sharpener and some quality knives. I dont sharpen often as they stay razor sharp for a long time, months. I dont really hone that often either.

Oh..... Wifey does everything indoor knives around my house.... I get cut if I suggest sharpening them myself.

She used to work in the Metro seafood department many years ago. Life skills come from the oddest places.

We use a Chef's Choice 1520 and have Japanese knives with a central carbon-steel layer. Basically, you're sharpening frequently but they get brutally sharp when the sharpening is fresh. My wife currently has a bandaid on a finger on her left hand.
I always upvote respectful/helpful posts wherever I encounter them.

Mine is, I can fold t-shirts perfectly square and REALLY fast. I worked in the stock room of clothing retailer back then.

i have a lansky sharpening system and one of those cheap ceramic ones that you just pull the knife through.
the ceramic one actually works great... only takes me like 30s to get my knives back up to paper slicing sharpness, while the lansky takes me like 5-10m to do a knife.

Folding shirts and undies (but how the hell do you fold a thong. I mean seriously, and then i complain about her shirts, Winking Face) often brings us close to divorce..... Lol

It's a sign that you should get few new thongs from new owners. Change your thongs every few years mate. No divorce needed.

I use the same sharpener for my Japanese knives, i'm not needing to sharpen frequently... they are sharp for an unbelievably long time. And I'm using them daily.

Yeah, we cook a lot and our knives probably see dozens of hours of chopping every week. Basically, only two knives get the bulk of the use in Casa Smethwick and they need to be sharpened at least once a month.

How often sharpen. I sharpen about twice a year.
How often hone. Hone (ceramic rod) almost every time I use my chef's knife. Other knives, rarely.
How sharp is sharp. Capable of shaving hairs on my arm is good enough.
Methods. I use an EdgePro manual sharpener. I'm no good at freehanding it.

We professionaly get our Wusthof's sharpened every year before the Christmas holidays. Approx 20$ for 3 knives

If you have harder or more brittle knives like many Japanese brands they need to be sharpened more.
