I’m with you on the sous vide (although I normally stick with 48 hours), but why deep fry instead of broil for the finish? A quick google turned up this southern lady frying some ribs but I didn’t see much else from the usual cooking people that I trust:

Same reason an air fryer is stupid compared to a deep fryer: Air Fryers Ovens are mostly directional, even convection. A broiler is the at least radiant but it's 100% directional.
A deep fryer is basically like a frying pan that 100% wraps around your food making a real nice crust everywhere.
Plus if you use something delicious in your fryer like lard, it adds a certain flavor that's unobtainable by any other cooking method.

Also I might be an old southern lady. If not on the outside, certainly on the inside.

Went to Longos today and had the butcher cut me about 5lbs since there wasn't any left in the meat case. Asked him to trim off the fat as well and no issues. Each piece is approx. 1cm thick

My wife picked up 10 pkgs today - each pkg has 4 rib pieces about 1 cm thick. No extra charge for the thin cut.

Ajax had both cuts for $5.99 but the trimming not so good when I was there. Going to assume it was already picked through. Majority of the packages were just bone

T&T uses ungraded beef like many Asian supermarkets, it's also frozen.

If you buying 10lbs, i guess it will make a difference.
I'm sure if you ask the butcher in the back to cut you that amount he'll charge you $5.99, it's less work to cut 10lbs and place everything in one large package. If you ask him to cut you 10lbs and place them in 1lb packages be ready to get charged 6.99, atleast I would.

Those will eat very nicely.
Many spanish/latin people have it cut 2 inches thick and cook it on the BBQ for a few hours.

They look nicely marbled but from the picture, the colour is way off. If you look at the photos that rvcupcake posted, you'll see the difference, those ones are nice and red whereas yours are dark, I wouldn't be surprised if they were previously frozen, they should be fine.
