I’m with you on the sous vide (although I normally stick with 48 hours), but why deep fry instead of broil for the finish? A quick google turned up this southern lady frying some ribs but I didn’t see much else from the usual cooking people that I trust:death_hawk wrote: ↑ Personally I sous vide for 72 hours then deep fry them if they're the whole ones.

They look nicely marbled but from the picture, the colour is way off. If you look at the photos that rvcupcake posted, you'll see the difference, those ones are nice and red whereas yours are dark, I wouldn't be surprised if they were previously frozen, they should be fine.
