Niagara Falls is a HUGE Tourism Mecca... prices go up and down like a yo-yo
Things also flex seasonally and along with Canada / US Holiday Weekends
May is typically bigh because of the 3 well known “occasions”... Mothers Day Weekend - Victoria Day Weekend - Memorial Day Weekend
PLUS it when the bigger attractions that focus on the water reopen
(Maid of the Mist - Hornblower - Journey Behind the Falls - Cave of the Winds - Whirlpool Aero Car - Whirlpool Rapids Jet Boats etc)
So... they can charge a premium due to demand
In my experience, the best deals are not found with coupons or 3rd Party Resellers
(Lots of dicey big name Hotels / PR Hyped hotels in NF)
But are found thru the Brand Name Chain Hotels themselves via their websites / front desks
(Most will also price match if you find their hotel listed cheaper elsewhere)
Join the Loyalty Programs... and sign in to get member rates
You will also do better if you aren’t set on having a room with a Falls View (ie City View)
Or choose a hotel atop the escarpment but without views
A lot of decent deals to be found in that category... such as Comfort Inn - Country Inn & Suites - Hampton inn etc)
Hotel Loyalty Programs are where it’s at these days... especially if you strategically play the game
Sign up for email, bonus points bonus events (quarterly), and are willing to switch hotels nightly on a weekend getaway
Points add up, and compound... great way to turn Points into FREE Nights, or MONEY OFF
It’s truly a non advertised market, that can add up to higher savings than any of the discount hotel pricing websites you’ll find on line

Try looking at Groupon, Wagjag or Tavelzoo. They often have hotel deals but don't know if you'll find something in the high season

You'll see on that first page that a user posted links to Embassy Suites/Four Points deals. These are sent out to people on their e-mail lists, so sign up for their e-mails and you should be receiving those as well.
But yes, once you get into May, you will start seeing the prices for weekend stays to go up dramatically (it is not uncommon to see differences of $50+ per night from week to week).
If you can go during the week, this is one of the best ways to save an incredible amount of money (some of these Travelzoo deals, etc. are for mid-week stays as well).

For any hotel deals you buy from groupon or any other online bookings: always budget for extra costs and taxes and fees to be paid on site.
My family bought the groupon deal for 2 queens at Ramada Niagara Falls. Extra cost in parking ($20) and facilities ($10). So the $38 USD groupon deal ended up actually costing around $87 CAD, with the exchange rate (1.34 USD to CAD) additional taxes and fees.
Also the $20 voucher for restaurants food (eg. meatmarket, flour mill, ihop, don cherry ... etc.) was not as good deal - you had to buy 2 averaging near $30 each, plus taxes - so you had to spend $70+ to take only $20 off, too expensive compared to local fast food & groceries options. So we end up not using that coupon.
But overall the hotel is still pretty good, great gym and pool facilities, clean suite, contains microwave & fridge & flat screen TV, 2 comfy queens bed, so overall we still had a pretty good time, even if the cost were more than original budget. Your mileage may vary.
