What quazy said, or else make a stew: cube the meat, use the bone and other inedibles to make the broth, then stew the meat in it with onions, celery, and parsnips (or carrots, but I think parsnips work really well here), maybe mushrooms, potatoes, and/or whatever else you like - maybe rice or a noodle etc. And whatever herbs you like, but rosemary and garlic are the classics with lamb. Or Herbs de Provence is great too. (And salt and fresh black pepper of course.)

I stopped buying NZ lamb years ago. Try Ontario (assuming you're in ON) lamb.
