This sn750 is pcie 3.0

This will work however the ps5 is ideally compatible (read: Suggested by Sony) to work best with pcie 4.0 SSDs.. which are relatively very new to market.

These WILL not work for the ps5 on the expansion slot.
You can use them as external storage via usb. But they will not let you play ps5 games on it.

Should I get the 1TB or 2TB?
Building a new Gaming PC after 10 years.

How much space do games use these days? Will I use that much space?
I haven't loaded newer games because I haven't had the hardware to run them in ages.

I remember when SSDs came out, failures and losing your data was an issue. Is it the same for M.2 drives?

Just built a PC with old drive (2x 500mb NVME for 1 TB total) - Get the biggest you can. You won't regret it. Games are huge today...

I see the same for the 2TB.
I PM'd with Memory Express and got it about $10 cheaper (ME's shipping cost included)

Can you clarify? So you price matched for $329 plus ME's $8.99 shipping? How did you get it for $10 cheaper?
