Yes, when you have more than 2 accounts, the switch will prompt you which account you want to use before you start a game. You can select your regular account for games that were bought with your European account

As long as the EU account is linked to the Switch, any other accounts on it can play them.

I'm not sure what the Switch situation is, but accessing an out-of-region eShop on the 3DS at least requires custom firmware and is generally not recommended.

You can easily access other stores, problem is purchasing from other stores. Your credit card WILL NOT work in the EU eshop.

How can you get around to buying these? The eshop wouldnt let me buy with canadian CC

Perhaps buy an eshop card online through a EU retailer, or any seller with a code from that region, and enter the PIN on your switch?

Yah, I've never got the EU stores to work with this or South Africa, which often has lowest prices on sales. It works definitely for me when switching to Mexico, which often has good prices.
