Pastry Flour at Grocery Stores?

Pastry Flour at Grocery Stores?

Is anyone seeing pastry flour back in the grocery stores? All purpose is starting to come back on the shelves now, but I've been to multiple grocery stores around Etobicoke in the past 2 weeks and there is no pasty flour to be found. I typically buy the Monarch brand, but it's like they stopped making it. Wondering if anyone seen any pastry flour in their grocery stores lately?

What is the substitute for pastry flour?
Using all-purpose flour instead of pastry flour
If your recipe calls for pastry flour but you don't have any, don't worry. You can make a substitute by whisking together 1 cup of all-purpose flour minus 2 tablespoons (or 14 tablespoons of all-purpose flour) with 2 tablespoons of cornstarch

There are steps to make bread flour as well. The only thing you can't make I think is double zero ( 00 ).

Yeah I've been using all purpose in the mean time but it's just not giving me the same texture on my bakes like the pastry one did

Bulk Barn has pastry flour. Also Wholesale Club has a 20kg bag of Monarch brand in SK for $18.97.
