Plumbing question: refrigerator water line hookup DIY possible in this case?

Hey guys,

First I am fairly new when it comes to plumbing, and looking to connect the refrigerator water line to this existing connection (PEX?).
Do you think it's possible to DIY?
From what I checked online, I'll need a shut-off valve to hook up to the existing connection, and then connect the tube from here to the refrigerator.

If you have the line, yes should be able to DIY with the right fitting from that pex to what is likely 1/4” compression on the fridge or 3/8” threaded.

Quick update guys:
Ended up getting a straight sharkbite shut off valve and a braided stainless steel hose
Installed without an issue so far.
