Try this one, I have tried a few, and this is one of the easier and better ones. Since the cook time is so long its tough to experiment. I had learned about carnitas in Texas and it made an impression.

Two important things that give it that unique flavor is the orange and the most important, I feel, is to broil at the end to get the crispiness (use the fork test in video) and there WILL be smoke. But don't let your wife yelling that the food is burning get to you. Make sure it is crispy!



P.S. I just bought a Searzall from a previous posting here on Amazon for the next time I make it.

It was 1.99/lb last week at Lococos. I went in last night and they must have stocked too many because they were doing buy 1 get 1 free. Walked out of there with 4 MASSIVE shoulders.

I watched the entire video - love watching Chef John. I'm definitely going to give carnitas a try.

Good deal. Wish I had seen this flyer last night while I was out. Last summer Freshco had them for this price and then were clearing them out for like $0.50/lb plus a few bucks off on top of that. I got several massive pieces for like $3 each and used them over the course of the winter. Although I think many would hate how I went about cooking mine. I did it in my instant pot as I am not not big on crackling due to teeth issues as a result of a calcium deficiency screwing up my teeth. Rest of my family likes the leaner meat close to the bone, so I cut off all the fact and skin along with some of the moist outer meat and I'm content for a few days.

Wish we had room in the freezers :\ as I'm on a pork kick right now.

Thanks OP, bought 2 pieces. Gonna try perhaps making pork carnitas for the first time. Bought a second one to freeze but not exactly easy finding space in the freezer for this huge chunk...

Good that it worked for you, at the Superstore I went to (Georgetown) the meat was purple, did not look good at all. And the best before was June. I skipped it.

Bought 3 and smoked it all yesterday. Smaller one came out dry(probably the meat), the biggest one came out juicy and perfect and was great. Haven't shredded the middle one yet. Thinking of getting few more. They had tonnes at the store.

Thanks for the introduction to carnitas! I tried a modified version of this (I used a slow cooker), and it turned out great! The orange really makes this special. I wish I would have made more .... but I guess the sale is still on Smiling Face With Open Mouth!
