It is a water heater, yes, but it also regulates the temperature. You can do that manually too with just a thermometer, but I've never tried it.

I was going to pick up the Accu Slim Sous Vide Immersion Circulator by Instant Pot at CT tomorrow but this is half the price. Should I get this instead?

Yeah, it seems like good value. I hope it's at least 800W. But remember no returns except if it is defective. Giftcard returns should be banned. Maybe store purchases offer better return policies?

It seems like a great deal..but I might cough up the extra loot and just get the InstaPot sous vide from Canadian Tire thats on sale this for $79.99 to avoid any issues with if this showcase one ends up a dud...as the InstaPot sous vide comes with a one year exchange at any Canadian Tire...

Where's all the RFD sous vide pro's? thoughts?

I got this for my parents. I have a higher wattage circulator, but this is fine too. The main issue is getting the water to above 150F. I sometimes cook stuff like chicken legs and thighs at 165F in a large container, and getting the bath up to that temperature can take 20-30 minutes, even when always starting from hot water (120F). I'm guessing this one would take even more time.

Alternately, you can boil water in your higher wattage electric kettle and dump it in here to raise the temperature.

This has decent reviews. I'd pick this over the CT deal.
