Subway and their lettuce?

Subway and their lettuce?

Serious question. I don’t mind subway and walked in yesterday looking for a previous days special. It had expired but i looked at the lettuce and wonder why its not GREEN? Their lettuce looks more white than green. Is it something the supplier puts on the lettuce to last? I know they arrive in huge bags and lettuce does go bad pretty quickly in general.

They use Iceberg lettuce can be whitish at times.
Even the green is a very light green.
Pretty sure the cut to the core to make use of the entire head of lettuce. Some people toss the core…
But the core of the ice berg lettuce is definitely white! Or very light green.

They definitely arent using green leaf lettuce or romaine lettuce. Both of which have that deep green colour youre probably thinking of.

Or feel free to check another location. The lettuce should look pretty much the same at all locations.

I ended up at safeway. There subs are pretty good. At least they were years ago. :)

You just described my #1 pet peeve.. bagged preserved lettuce from places that act like they are "healthy" food alternatives

It is absolutely loaded with preservatives to stop it from browning, otherwise lettuce won't even last one day once sliced.

Osmow's and other crap tier shawarma shops use this garbage too

Yeah after i posted I did some googling of this subject. I don’t believe everything i read on the internet but came across an article stating how long it takes for that subway lettuce to reach the stores. Neutral Face something like 22 days. Again I’m not sure its true.

The local slouvaki/burger/greek canadian place had this surprisingly good “cheap” salad.

Its that fast food shredded ice berg lettuce. Exactly 3 half slices of tomato.
3 pitted olives (the actually taste fresh… so a decent canned/bottled version).
Lots of grated feta. Not crumbled… but grated with a cheddar cheese grater.
A vinaigrette sauce.
Its kind of cheapest looking… but it taste good. Their secret is extra feta and good olives.

You know what isn’t too bad. If you live in the west and want to pickup a good value salad. Fairly basic but quite a few toppings and just over $6 including tax is Panago. I get double red and green peppers, two types of tomatoes, onions, and think im missing one other item. Good for two meals IMO and im a big eater.

Actually its near dinner time lol I think i will pick one up. Once in awhile the lettuce is a wee bit on the limp side.

You just described my #1 pet peeve.. bagged preserved lettuce from places that act like they are "healthy" food alternatives

It is absolutely loaded with preservatives to stop it from browning, otherwise lettuce won't even last one day once sliced.
There are no preservatives in bagged lettuce. After being shredded,the lettuce is washed in a chlorine solution and then rinsed before being dried in a spinning drum.Then it is bagged with a slightly higher nitrogen/o2 ratio to prevent oxidation.The key element is the respect of the cold chain process from the the harvest to the distribution of the finish product.Generally bag of shredded iceberg has a shelf life of 14 days and romaine around 12 days.

I ALWAYS look at the lettuce and jalapenos before ordering. If either looks dry and/or old, or if the lettuce is browning I pass on it.

Pretty much this.
Once exposed to a regular atmosphere it goes to crap at the same rate as "real" lettuce because it is real lettuce.

Modified atmosphere package is fun.

Worked in fast food for years. Once you open the bag of lettuce, it doesn't even last a day. There's definitely no preservatives.

Speaking of, what's the deal with Boston Lettuce? Does it owe it's name to the city? Anyway, I haven't seen many places stock these only at "upscale" grocers. Lettuce is lettuce, imo. The taste difference, if there are any, is less than negligible or are people after the texture more than the neutral taste?

As far as Subway, I think the fact that they vacuum seal it is why they last long. I suspect they go through a lot of bags a day so once opened, it won't last longer than 24 hours.

Also known as butter lettuce.

Great for burgers as it can take the heat and grease from the patty without wilting.

What? There's certainly a taste difference.
I think the fact that they vacuum seal it is why they last long.
You can't really vacuum seal produce. It screws with the texture.
Produce is usually modified atmosphere.

I can't speak for Subway but as a teen I worked at Mr Sub and we would get cases of full heads of iceberg lettuce and then we'd slice them using the meat slicer. Don't know if that's still the same today, but I have to imagine it's way cheaper than buying the pre-sliced bagged stuff, so I wouldn't be surprised.

Their tomatoes can be pale as well. Cheap bulk food.

I stopped getting lettuce on my Subway orders years ago; they always throw lots on and then skimp on the other produce. I now decline the lettuce and ask for the veggies that I really want. If they skimp, I'll ask for more. I've never had them say no, and I get a sub that doesn't taste like it's been stuffed with packing material.

In the heyday you would still need to travel quite a distance to get to a mr. sub. You can’t throw a rock and miss a subway back then. Fun fact: subway has more locations than McDonald’s.

I’ve had Boston lettuce once or twice in my life time. Guess I’ll try it again if and when I see them. I also like alfalfa sprouts in sandwiches so it may work well with burgers too?

If Boston lettuce gets crushed it will start decomposing rapidly where the leaves were broken so it is highly perishable, so you do not see it everywhere because it is potentially high-wastage. Sometimes you can get it as "live lettuce" with the root still on & it fares a bit better then.

Lettuce varies in texture, bitterness & intensity of flavour. Iceberg is very crisp, & bitter but watery. Romaine is very bitter if you buy whole deep-green heads & less so if you buy the crisper hearts. Boston lettuce is lower in bitterness & higher in a "green" flavour and relatively tender.
