Discover a World of Ramen
An acclaimed chef and a significant force behind Toronto's ramen boom is giving a lecture and demonstration at George Brown College on Tuesday, February 18. Chef Ryutaro Takahashi, the owner-chef of RYUS Noodle Bar, will discuss Japan's unique ramen culture and describe his passion in bridging Canada with Japan through ramen using local ingredients (chicken in particular). He will also describe his commitment to detail, perfection and the Japanese form of hospitality known as omotenashi, and the challenges of maintaining traditional concepts of ramen while meeting the preferences of customers of varying backgrounds and culture in Toronto. As well, he will define the concept of umami as it pertains to ramen, and give a demonstration on producing stock with various ingredients including dried bonito other dehydrated seafood. As the only foreign proprietor of a kiosk at the famous ramen museum in Yokohama, Chef Takahashi will also touch upon culinary tourism to Japan. Admission is free, but registration required.
About Chef Takahashi
Chef Takahashi came to Canada in 2008 and opened RYUS Noodle Bar in 2013 in Toronto, with a second and third outlet now on Broadview and Queen West. Officially certified by the Japan External Trade Organization (JETRO) as a Japanese Food Supporter, he promotes Japanese food culture through ramen through wide-ranging activities, including a short-term pop-up outlet in New York. He also opened a restaurant in the Shin Yokohama Ramen Museum in Yokohama, Japan in 2018.
