Also, I think WFH is melting my brain. I spent at least a minute wondering why anyone would be interested in mayo that expires next Wednesday.

Mayo doesn't have an "expiry date". Its a best before date for taste/freshness. Will likely still taste edible a year later.

Mayo has eggs in it, so eating it way past the best before date is potentially a salmonella poisoning hazard

Salmonella doesn't magically appear in previously uninfected eggs that are already out of their shells. Also, store-bought mayo contains a ton of acids and preservatives that prevent bacterial growth. It's even been shown that commercial mayo can prevent bacterial growth in already spoiled meats.
