Neither. They use a type of rapid cooking ventless oven similar to this:


These ovens use a combination of air impingement and microwave energy to cook foods quickly. The air impingement feature directs hot air moving at high speed directly onto the food. It’s sort of like a turbo charged convection oven in that sense. The hot air creates the crispy outer crust on your food that microwaves can’t. It also works as a microwave to heat the food throughout very quickly. The quality of the product is almost as good as one that was heated in convection oven.”

Combi-ovens are extremely popular in homes all across Asia, but quite difficult to find in NA

indeed! The technology has been around. I've seen it more frequently used in cafe's for heating sandwiches quickly, while maintaining a nice texture.

TurboChef is a brand name. There are also FRYERS like this.

Watch around 5 min mark...after I saw this video I went down a rabbit hole of googling this appliance.

We're all bozos on the bus until we find a way to express ourselves...

Failure is always an option...just not the preferred one!
